The Hottest Food Trends for 2017
Best of British
With the dreaded prospect of food imported from EU countries increasing in price as we progress through Brexit, Create predicts that event caterers, restaurants and the like are far more likely to support purchasing from British suppliers, producers and farms. At Create, the team take great care in trying to source as much produce as possible from local suppliers, and this will continue as we progress through 2017 and Brexit.
Watermelon
Watermelon has been a staple in sunnier climes for a long time, however it is about to be big news in the UK. Utterly delicious, full of good stuff like antioxidants, vitamins and minerals and with a super vibrant colour to boot, what’s not to like.
We will be utilising this super ingredient in our summer soft cocktails, in cooling granitas and even in delicious salads.
Fresh Turmeric
The Turmeric Latte was an Instagram sensation in 2016, however aside from drinking it, turmeric is increasingly being used in all sorts of dishes (that aren’t curry!). Create’s talented kitchen team use this earthy, aromatic spice on whole roasted cauliflower, in immune-boosting breakfast juices and even in ‘golden milk’ ice cream.
Hero Vegetables
The Create team LOVE vegetables! When the team design menus they always strive to include a number of dishes where the vegetable is the hero of the dish. Key veggies this year will be purple cauliflower, leeks, onions and aubergine, which we will see replacing carb elements in many dishes.
Tacos
2016 saw several new credible Mexican restaurant openings in London, with the Hart Bro’s El Pastor now a firm team favourite. For 2017 we will be taking inspiration and ramping up our taco offering with fillings such a scorched mackerel, grilled lobster, pork shoulder and even dark chocolate and chilli.
Marbling
We first saw this trend in food from the Meringue Girls, whose pretty marbled delights have taken London patisserie by storm. In 2017 expect to see all manner of marbled desserts… meringues, wedding cakes, macarons and even doughnuts!
Sherry
The drink that used to be the tipple of choice for the blue-rinse brigade is having a bit of a renaissance. The dry variety is now being used in many of London’s coolest cocktail bars. And with traditional puddings like Sherry Trifle regaining their lost popularity, it’s also finding its way onto many a restaurant menu.
Back to Black
If it’s black, it’s hip. Think ingredients charred over hot coals, black rice, squid ink, black brioche and even activated charcoal drinks.
