Celebrating nature’s secret ingredients at Foraged & Found

Foraging is mankind’s oldest occupation, and we are built to be hunters and gatherers, both physically and mentally. Our Foraged & Found feast is designed to offer our guests a chance rediscover their wild side as they taste the natural delights that sustained our species for millennia. 
We will be welcoming guests to Rum & Sugar to celebrate these secret and forgotten ingredients which evoke a taste of their ancient history, reawakening their senses with a journey back to their roots.

We don’t want to give too much away, but suffice to say, Rum & Sugar will be receiving a special make over to bring the essence of the ancient countryside right to the centre of London’s urban heart. With rural entertainment and a selection of delicious drinks to match, we are hoping to whisk our guests away for a carefree evening of both tranquility and joy.

We’ve scoured our local landscape to bring freshly foraged ingredients which fall under four themes: from Land to Sky, Grasslands and Mallow, Rivers and Ponds, and Bushes and Trees. Virtually every dish we will be serving at will feature at least one foraged item. Guests can sample foraged burdock in our Cornish rabbit tortellini with parsnip and wild garlic leaf oil, try foraged sorrel in a Thames oak smoked eel dish, and complement a dessert of Victoria plum tarte Tatin with fallen cobnut clotted cream. This is just a small taster of the varied menu Executive Chef Gary Devereaux has created from items he will be foraging himself; there are so many more inspiring dishes for our guests to enjoy.

By the very nature of foraged food, even our chefs won’t know the exact dishes until the day – guests should expect the unexpected in a night of wonder and surprise.
