60 Seconds with Jamie Cairns

Jamie is our Executive Chef – he’s usually the one to blame if you are crippled with food envy every time we post pictures of our amazing Ampersand dishes! Whatever kind of event catering our clients wish for – sit down dinners, bowl food, canapés, buffets, you name it – Jamie has an amazing idea to bring it to life.

What has been your all-time favourite event you have worked on and why?

Elton John’s White Tiara Ball. This event was fantastic due to the creativity and excellent produce we were able to source for such an important event

What is the best thing you have ever eaten?

The most memorable thing would be my first taste of abalone in South Africa. Abalone is a marine snail which tastes beautiful.

Tell me about an event situation that required a quick creative solution?

On an event at The London Aquarium, more than half the guests were vegetarian but had not specified it in advance. We were very pushed for time but managed to produce a fast batch of cheddar cheese soufflés, which, thankfully, went down well.

If you could learn to do anything, what would it be?

I would love to learn to speak Spanish as it’s an ambition of mine to travel South America.

If you could witness any event past, present or future, what would it be?

I would love to witness going to the bottom of the ocean. Scuba diving used to be a great hobby of mine, and I would one day like to get back in to it.

If you could be any fictional character, who would you choose?

Clark Kent because he is clever and helpful and always keeps things under control!

If someone asked you to give them a single piece of advice, what would you say?

Follow your dreams.

If you could be a superhero, what would you want your superpowers to be?

The power to fly and have no boundaries.
